Top eateries around the world are trying to attract new customers with novelty dishes and serving food containing organic rose petals.

Restaurants such as El Bulli near Barcelona, Per Se in New York and Zazu in Quito Ecuador are experimenting with rose petal dishes and desserts such as “Rose Souffle”.

The Zazu restaurant explained that the roses are grown especially for eating, and the restaurant’s Rose Martini, made from petals soaked for a week in vodka, is fast becoming a favourite with their customers.

The roses are not just any old roses out of their garden but are grown organically.  In Ecuador’s central highlands there are three million bushes under cultivation, and around one hundred thousand of them are grown for eating with no pesticides, but use garlic to ward off bugs.
